Avocado DipMash 1 peeled and stoned avocado in a bowl,
then add 3 ounces of cream cheese,
4 tablespoons of fresh cream,
and 2 - 3 teaspoons vinegar.
Season well with salt and pepper, and crushed garlic to taste.
Turn dip into shell or bowl and serve with fingers of carrot, celery, spring onion etc., to taste.
Cheese and Tomato SliceIngredients
Cover with greaseproof paper and steam for 20 minutes.
Now stir in beaten egg and grated cheese.
Return basin to pan to steam until mixture is thick.
Pour mixture over breadcrumbs, stir and season well.
Press into a clean bowl.
Slice when cold.
Beat egg slightly, mix in the cheese, pepper, salt, with a little dry mustard.
Add milk and mix well.
Fill the tins, cover with pastry, damping edges and pressing together.
Bake in fairly quick oven for about 20 minutes (Regulo 5-6).
stir in curry powder and season to taste.
Add 3 tablespoons of sultanas and mix through.
Place in serving bowl and garnish with remaining sultanas
Danish Blue DipMix together 2 ounces of mashed Danish Blue cheese,
4 ounces cottage cheese,
2 level tablespoons finely chopped chives,
1/4 pint fresh single cream.
Season to taste.
Serve in a dish surrounded by assorted small biscuits for cheese.
Pate DipMash together 4 ounces liver sausage,
3 ounces cream cheese (or cottage cheese),
1 tablespoon Worcestershire sauce.
Stir in 4 - 5 tablespoons of fresh cream to give a softer consistency.
Season to taste, and turn into bowl.
Serve with Melba toast.
Sardine Spread (or dip)Ingredients:
Using a forth, thoroughly mash the sardines and cream together.
Add the sauce and mustard together and continue to mash until mixture is very smooth and creamy.
Test for taste and adjust seasoning.
Smoked Kipper DipFlake 4 ounces of cooked kipper fillet into a bowl.
Add 1 tablespoon of lemon juice,
4 tablespoons of fresh cream and
4 tablespoons mayonnaise.
Serve with cucumber fingers, celery and avocado dipped in lemon juice, salt and cayenne pepper.
Sweet Pickle DipMix together 4 tablespoons mayonnaise,
4 tablespoons whipped double cream and
3 tablespoons of sweet pickle.
Season to taste.
Turn into bowl.
Serve with button mushrooms and cubes of cheddar on cocktail sticks.
