Batter for
Anything
Ingredients:
- Water 400 mls
- 1/2 teaspoon
of Salt
- 1 teaspoon of bicarbonate
of soda
- 2 tablespoons of oil
(peanut or any other)
- 1 tablespoon of vinegar
- 1/2 teaspoon
of pepper
- 2/5 cup of
cornflour
- 3/5 cup of
self raising flour
You judge about
the amount required to make thin batter - it will swell a lot when
cooking.
Flour Batter for
Fish
1 plastic bag and self-raising/plain flour
Shake fish pieces in plastic bag.
Spray lite canola oil in hot pan.
Turn fish once only till crisp.
Sweet and Sour
Sauce
Ingredients:
- Pineapple pieces
- 1 tablespoon Worcester
sauce
- 300 ml sugar
- 300 ml vinegar
- 200 ml hot water
- 3 tablespoons of tomato
sauce
- 1/4 teaspoon
of red food colouring
- 1/8 teaspoon
of yellow food colouring
- Thicken with cornflour /
cold water
Marinades
Chicken
Cut up large chicken.
Soak in the following marinade for at least 20 minutes:
Ingredients:
- 1/2 teaspoon
of sodium bicarbonate
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 1/8 teaspoon
of pepper
- 1/2
tablespoon of sesame oil
- 25 ml of water
- 1 tablespoon of cornflour
- 1 tablespoon of wine
(optional).
Meat
This is based on - 11/2 Kilogram of meat
Soak in the following marinade for at least 20 minutes:
Ingredients:
- 1/2
tablespoon of salt
- 1 teaspoon of sugar
- 1/2 teaspoon
of pepper
- 2 tablespoons of sodium
bicarbonate
- 1 tablespoon of sesame oil
- 1 to 2 tablespoons of soy
sauce
- 2 tablespoons of cornflour
- 400 mls of water
Seafood
This is based on - 11/2 Kilogram of seafood
Soak in the following marinade for at least 20 minutes:
Ingredients:
- 1/2 clove of
garlic
- small amount i.e. a pinch
of ginger
- 1/2
tablespoon of salt
- 2 tablespoons of sesame oil
- 1 teaspoon of sugar
- 1/2 teaspoon
of pepper
- 2 tablespoons of cornflour
Fish
Marinade Soak fish in the following for 2
hours to 1 day:
- Lemon squeeze or juice
- Ginger crushed or powder
- Garlic crushed or powder
- Small amount of sesame oil
Throw straight onto B.B.Q, or hot plate.
Spray hotplate with oil
Only turn once.
SERVE!
Meat
Marinade Soak meat in the following for 2
hours to 1 day:
- Sesame oil
- Sugar
- Bicarbonate of soda
- Water
- Garlic
- Ginger
- Soy Sauce
Throw straight onto B.B.Q, or hot plate.
Spray hotplate with oil
Only turn once.
SERVE!
Rice
Fried Rice
Ingredients: Have each
ingredient in a separate bowl:
- 1 egg per person
- Yellow colouring
- Reduced salt soy sauce
- Diced ham
- Shallots (angle sliced)
- Oil (any kind you prefer)
- Sesame oil
Optionals (diced)
- Prawns
- Garlic
- Chicken
- Ginger
- Pork
- Peas ...etc.
Rice: Cook ordinary rice, rinse in cold water, drain, leave in fridge for 3 hours (this gets rid of moisture).
Methodology: Have all the ingredients ready in bowls:
Do the following very quickly - stay at the stove - heat the wok or frying pan - very hot.
Add 2 tablespoons of oil
Add the egg(s)
Brown 1 side
Take out and
slice, and place into a spare large bowl.
Add 1 tablespoon of oil and 2 teaspoons of sesame oil to the wok / frying pan.
Add the ham and optionals to wok / frying pan
Keep turning
When cooked place in to a spare bowl
Keep it warm (put a lid
on it)
Add 2 tablespoons of oil and 1 teaspoon of sesame oil to the wok / frying pan.
Add the rice - constantly turn it so it does not stick.
When very hot add the ham/egg mix back in
Keep turning the mix
Add the soy sauce (about 1/2 to 1 tablespoon)
Add the shallots
SERVE!
Sate Mixture Ingredients:
- 1 bottle of sate
- 1 can (400 ml) curry gravy
Mix together and use as you wish.
Lemon Sauce Ingredients:
- 1 lemon, sliced
- 100 mls sugar
- 150 mls chicken stock
- 100 mls vinegar
- 2 tablespoons of lemon jam
(either available from a Chinese shop, or use lemon marmalade)
- 1/4 teaspoon of salt
Optional:
- A couple of drops of lemon
essence.
- A couple of drops of yellow
food colouring.
Methodology:
Boil slowly for 5 to 10 minutes.
Pour through colander - throw away peels etc.
Put back on heat - thicken with cornflour / cold water when you have your meal ready.
Use for crumbed chicken, or fish.
