Scallops in bacon and garlic.

This is a really easy receipe.  

First take 6 hand dived scallops and clean from the shell, remove their skirts and roe (leave roe if you like it).

Rub some garlic butter over the scallop then wrap  smoked bacon around the scallop.  Grill on a mid heat turning continualy until the bacon has cooked. Serve and enjoy.

Scallops in ginger,soya and spring onion .


4-6 tbs dark soy sauce, 2 tbs oyster sauce, 1/2 pint water, 4 tsp lazy ginger, 2 tsp garlic, 2 -3 shalottes finely chopped, 1/2 tsp of chinese 5 spice, 4-6 spring onions chopped, olive oil and butter.

Mix all the ingredients together except the spring onoins, olive oil and butter. bring the mixture slowly to the boil in a pot and 1 min from serving add the chopped spring onoin reduce heat at this time to simmer.

Take 12 scallops, clean them and their shells add the butter (with garlic if desired) and olive oil to the frying pan and get really hot, cook the scallops for 30 to 45 secs on each side and put back in the curved part of the shell add the sauce and serve.

Baked Scallops & Prawns in Chilli & Garlic Butter.

12 Large peeled raw prawns, butterflied.

8 Scallops, halved

75 gram butter, very soft

1 garlic clove, crushed

1 red chilli de seeded and finely chopped

Parsley chopped to make 1/2 tbsp plus a few leaves to decorat

Taragon chopped to make 1/2 tbsp plus a few leaves to decorate

1 lemon zested

Crusty bread, to serve


1 divide the scallops and prawns between 4 small buttered oven proof dishes

2 Put the butter garlic chilli herbs and lemon zest in a bowl and beat together.

3 When ready to cook heat the oven to 220 c /fan 200 c/ gas 7.

4. Put the butter over the dishes and bake in the oven for about 8 mins or until the prawns are pink and the scallops cooked.

5. Add the leaves to finish and serve with crusty bread

Scottish Tablet


1 Pint boiling water

8 oz butter (unsalted)

4lb white sugar (castor or granulated)

1 large (450g) tin condensed milk

Finally add few drops of vanilla essence



Add all the ingredients (butter first) into a deep pot and slowly bring to the boil.

Ensuring that the sugar dissolves before it boils, once sugar is boiling add condensed milk simmer for about 20mins take of the boil and vigourously mix for 5 minutes then pour onto greased tray.

While the mixture is boiling prepare a flat tray by greasing it

Beat the contents of the pan vigourously

Pour into the tray and leave to cool.

as the tablet starts to harden run a sharp knife through the tablet to the desired slice size you want.
