I am currently working with the North Coast Abattoir Group, and - seeing as sheep are pretty much going to be involved - it seemed a good idea to try the local wool.  Found a lovely product grown, spun and dued on North Ronaldsay.  Very special wool, very beautiful colours, very soft (and maybe not quite so fitted to tie making as our lovely Herdwick, as it is so fine).  Here's the result:
