Lentil Bake….

I don’t often put recipes in m’blog – but we had this for tea and it just suits the weather…

Lentil Bake

2 cloves of garlic - chopped

3 oz lentils

½ pint of veg stock ( could be home-made… https://theorkneynews.scot/2022/02/05/waste-not-want-not-2/ )

Small tin of chopped tomatoes

½ tsp cinnamon

½ tsp nutmeg

½ tsp brown sugar

Salt & pepper

3 medium or two large potatoes – sliced

1 oz marge

1 oz plain flour

½  pint of milk

3 oz cheddar

2 oz mushrooms – sliced

½ a pepper – chopped

1 slice of bread  - crumbled.

Heat oven to 200 degrees c. Put lentils on to cook in stock. Put potatoes on to cook for about 5-10 minutes.

Fry garlic, pepper, mushrooms and add tomatoes, cooked lentils and spices. Simmer gently.

When potatoes are ready, place in a greased oven-dish and top with the lentil mixture. 

Make a cheese sauce using  most of the cheese, leaving a little to use as a topping.

Pour cheese sauce over the lentils, top with remaining cheese & breadcrumbs mixed together.

Bake in the oven for about 25-30 minutes until golden and bubbling.  Good served with a green veg – for example broccoli.

Aubrey the Aristocratic Pheasant is back….

We think he’s taken up residence in the jungle at the side of the garden, but Mike snapped him strolling past the pond and the Broch of Gorseness….. https://theorkneynews.scot/2022/04/09/the-broch-of-gorseness-as-it-stands/   which needs re-roofing after the bad weather – as the Iron Age brochs will have done from time to time.
