But soon the days will start to lengthen

A Pasta Day Post-script….

Here’s another one – quick, easy, tasty and cosy for a dreich day….

Greek Beef & Pasta Bake

About ½ a pkt of Quorn mince

1 clove of garlic, chopped

A few mushrooms, chopped

4 black and 4 green olives, halved

Olive oil for frying

¼ pint  of stock made with 1 veg stock cube

½ jar or carton of Passata

½ tsp ground cinnamon

½ tsp ground cumin

½  tsp dried Oregano

Salt & freshly ground pepper

About 1/3 of a  pkt of macaroni or other pasta shapes.

A little bit of grated cheese.

 

Heat the oven to 180° C.

Cook the macaroni.

Peel & chop the garlic and mushrooms.  Heat the olive oil in a pan and fry them in it.

Crumble the stock cube into ¼ pint of water and pour this over the fried veg. then add the passata, Quorn mince, olives and herbs and spices.

Check the seasoning and add salt & pepper if wanted.

Drain the cooked pasta, add to mixture and stir well. Then put the whole lot into a greased oven dish, top with cheese and bake for about 20/25 minutes until cheese is melted and golden.

Yum.
