If you have a glut of courgettes try these recipes...

Zucchini Bake (Australians call courgettes zucchini)
375g zucchini - grated (or whizz in the food processor)
125g Self-raising flour
90g cheese - grated (or whizz in the food processor)
1 large onion - grated (or whizz in the food processor)
3 rashers bacon chopped
5 eggs
salt and pepper
(adapt it to suit yourself include chille or sweet peppers, no bacon, garlic, more cheese)
Combine all ingredients and place in a well greased tray, bake at 180C for 40 minutes or until cooked

Soup
Courgettes make a lovely creamy soup without needing cream so it's low calorie, pretty and tasty.
Use as much courgette as you want - grate or whizz in the food processor simmer with the stock of your choice till soft then liquidise.
For added depth of flavour gently fry chopped onion, garlic and chili in olive oil or butter.
Add the courgette then simmer with the stock of your choice till soft then liquidise.

Mousaka
Use your favourite recipe and replace the aubergine with slices of courgette or marrow.

Whizz a peeled cucumber with yoghurt for a refreshing drink.
Add a clove of garlic and lemon juice for a kick.
Use water instead of yog for a low calorie dairy free option.

Cucumber Pakora

Thick slices of cucumber
Gram flour mixed with a little water, salt and curry spices.
Dunk the cucumber and any other veg you fancy in the thick paste then deep fry.

Serve with a raita (thick version of above drink) and a tomato and onion chopped together.
