Zimbabwe W.I. - Sandwiches - under construction
Ingredients
120 g cold cooked chicken 3 tablespoons mayonnaise
30 g chopped green pepper 1 tomato
1 stick celery — sliced salt to taste
Method
Blend all ingredients pushing back onto blades when necessary.
CHEESE & CHUTNEY SPREAD
Mix together
Ingredients
120 g cream or cottage cheese 60 g chutney
1 tablespoon lemon juice 1/2 teaspoon curry powder
Dash of dry mustard Salt to taste
SANDWICH SPREADS
Chopped frankfurters, minced pickle, mustard and mayonnaise
Minced ham, dill pickle, green pepper, mustard and mayonnaise
Flaked white fish, chopped green pepper, celery, lemon juice
Anchovy paste, grated cheese and mayonnaise
Chopped egg, liver sausage, chopped onion, green olives, mayonnaise
Cheese spread, chopped hard-boiled egg, crumbled crisp bacon, Mayonnaise
Cream cheese, crushed pineapple, chopped mint leaves
Chopped hardboiled egg, chopped ham, chopped sweet pickle, Tabasco and Mayonnaise
Mashed baked beans, chopped piccalilli and celery
Chopped mint leaves and Marmite
FISH SPREAD
Mix 1/4 cup chopped pickled onions with
1 cup flaked cooked fish
1/4 cup mayonnaise
PINEAPPLE BUTTER
Mix 4 tablespoons butter or margarine with —
1/2 cup grated cheese
2 tablespoons pineapple juice
3 tablespoons chopped pineapple
This will be good with ham, cream cheese, pork or salami.

Ingredients
120 g cottage cheese 11/2 tablespoon cream 1/2 teaspoon chopped chives salt & pepper to taste
120 g mashed tuna
1/2 slice of onion finely chopped
Dash of paprika
Dash of Tabasco
Method
Blend until smooth.
PEANUT BUTTER SPREAD
Ingredients
1/2 cup peanut butter 1/3 cup mashed bananas 1/4cup mayonnaise
Peanut butter is also good with chopped bacon fried until crisp.

Method
Beat eggs, put everything except onions and cheese into top of a double boiler. Cook stirring
constantly until thick. Remove from cooker and add cheese and onion (grated). Bottled, this will
keep for some time in the fridge.
MUSTARD BUTTER
1 1/2 tablespoon prepared mustard
1/2 teaspoon lemon juice
Mix together with 1/2 cup butter or margarine. This is ideal with mashed egg and diced ham or beef.
