Welcome to Bual Wild Harvests

Bual Wild Harvests is born out of a passion for cooking using nature's wild bounty.  Based in the Sutherland village of Helmsdale in the far north of Scotland I forage for local wild herbs, berries, fruits and nuts to make a wide range of preserves, syrups and condiments as well as baked goodies such as biscuits and cakes. 

Frustrated by my own inadequacies on the foraging front, we collected loads of elderflowers in Spring 2012 and made cordials and wine, however the weather turn so wet that I decided to leave the berries for birds.  So I have done very little on this front. 

However I did win 1st Prize at the Loth and Helmsdale's Flower 2012 show for my Bramble Pomona!

Here's hoping in Spring 2013 I become more forage adventurous.

 

2013

April 19th and 20th saw Mike and I at Tombrek, Loch Tay, for conference on hazel coppicing.  Very interesting and hopefully more will happen nationwide.

April 27th and 28th we are off to the Community Woodlands Assocation's growing and harvesting food in community woodlands at Torridon.  Really looking forward to it.
